I love to make tomato sauce! For a number of years I produced an organic, low-salt, Heirloom Tomato Pasta Sauce that I sold at regional stores. It was the highest priced sauce on their shelves and it usually sold out. This tomato sauce was mostly appreciated for it's terrific flavor. But it also looked wonderful because of all the different colored tomatoes within the tomato sauce because I made my tomato sauce from a variety of red tomatoes, purple tomatoes, black tomatoes, yellow tomatoes.
You too can create different colored tomato sauces from the a selection of heirloom tomatoes. I'd make Orange Tomato Sauce from 2-3 orange tomato varieties, a Purple Tomato Sauce from some black tomato varieties, a Yellow Tomato Sauce from some yellow varieties, a Green Tomato Sauce, etc. Each of these tomato sauces had different levels of sweetness with respectively different characteristics that made them suitable for different kinds of foods...not only pastas but also fish dishes, beef and chicken too.
I'd use the paste tomatoes contained in the Sauce Tomato Collection by themselves or in combination with others or along with other non-paste tomatoes that would have other flavors I wanted in my sauce. Each of these tomato varieties are historically valued for producing a wonderful tomato sauce. Be adventurous and experiment with the wonderful flavors you too will discover from different colored tomato sauces.)

- Aunt Lucy's Italian Paste Tomato (Originally from Italy via Toni Casell's Aunt Lucy. Meaty fruit. A typically wonderful Italian paste with few seeds. Indeterminate. 85 days)
- Grandma Mary Tomato (An extremely productive variety producing 1 1/2 oz., 3-inch long, red, paste fruits. Indeterminate. 70 days)
- Power's Heirloom Tomato (Pale-yellow, 2 1/2-inch fruit with a pink tinge and good fruit flavors. Indeterminate. 80 days)
- Purple Russian Tomato (2 1/2-inch dark-purple, oval fruit Indeterminate. 85 days)
- Russian Big Roma Tomato (A favorite heirloom paste variety. Disease resistant. Lots of huge (4-inch), red, fruits with rich tomatoey flavors. Indeterminate. 85 days)
- San Marzano From Italy. Compact and prolicic producer of bright-red, slim, 2-3 inch, plum-type, fruit over a long season. A paste tomato with pointy end, heavy walls and little juice, so it's great for tomato sauce. Crack resistant. Better tasting than Roma.
- Wonder Light Tomato (2 1/2-inch bright yellow, sweet and meaty. Indeterminate. 78 days)
